RECIPES

  1. Ranch Chuck and Potatoes
    Jenny Binder

    1 pound beef roast, cooked in crock pot, and torn into pieces
    3 large potatoes, sliced (or chunked)**
    1/2 c. chopped onion
    1 T. butter
    1 can cream of mushroom soup
    1 cup ranch salad dressing
    1 1/2 c. milk
    salt and pepper
    1 c. grated cheddar cheese
    1 bag croutons, crushed

    Sautee onion in butter. Mix together onion, meat, and potatoes and place in 9x13 pan. Blend together soup, dressing, milk, salt and pepper. Pour over top. Sprinkle with cheese and then croutons. Bake, covered, 1 hour, then uncover and bake another 30 minutes.

    **TO FREEZE: Bake potatoes wrapped in foil, let cool, then cut into chunks. Do NOT freeze "raw" potatoes. Change baking instructions to Bake for 45 min. to 1 hour, or until heated through.

  2. Cornbread Casserole

    1 pound hamburger
    1 can green beans, drained
    1 can corn, drained
    1 can tomato paste or soup
    1 c. picante sauce
    2 boxes Jiffy cornbread mix
    (milk and eggs)

    Brown beef, add beans, corn, tomato, and picante sauce. Place in greased 9x13 pan. Make cornbread as directed, spread on top and bake 30-35 min. at 350 degrees.

  3. "Pulled Pork"

    1 Crock Pot
    1 Pork Roast
    1 Can Coke
    1 Bottle BBQ Sauce

    Put all ingredients into crock pot. Cook on low for 8-10 hours. Drain off juice. Pull pork apart. Add extra BBQ sauce if you like. Make a sandwich or eat by itself. ENJOY!

  4. Egg Rolls

    3/4-1 lb. sausage, cooked
    3. cooked vegetables (cabbage, carrots, peppers, onions, etc.)
    2 T. soy sauce
    1 egg
    1 tsp sugar
    2 tsp minced garlic
    Stir together and put in middle of egg roll skin. Dampen edges. Fold in bottom corner, then sides, and roll up. Spray with Pam. Cook for 20-25 minutes at 400 degrees until brown, turning over half way through.

    "Crabless" Rangoons

    8 oz. cream cheese
    1 tsp garlic powder
    2 tsp sugar
    1 tsp Worcestershire sauce
    24 Wonton wraps

    Stir together filling. Fill wraps with heaping teaspoon. Dampen edges and fold wraps into a triangle. Then fold in 2 corners. Spray wiht Pam. Cook 11-14 minutes at 400 degrees until brown.

    Shepherds Pie

    2 lbs. ground beef
    1 can cream of mushroom soup
    1 can cut green beans
    mashed potatoes

    Cook and drain ground beef. Mix with cream of mushroom soup. Place mixture in 9 x 13 dish. Layer with green beans. Top with mashed potatoes. Cook 30 minutes at 350 degrees.
